Turns out that there is a code for the "greater than" and "less than" symbols, and many others as well. &.g.t.; (without the .s) is the "greater than" code (note the gt), and &.l.t.; (again, without the periods) is the "less than". Another of note would be &.a.m.p.; (for &).
